As previously mentioned in the poached egg blog, I wanted to include simple recipes that you can perfect. Many of us grew up in double income households where cooking skills may not have been passed down nor the ‘why’ in cooking. Why you boil the water first with eggs but you add potatoes to cold water before boiling, as an example.

Another reason for including a variety of egg recipes is because they are cheap and ranked 100 points for bioavailability of protein. So in essence they are a great source of protein. Protein we need to repair muscles, build new DNA strands, your hair, skin and much much more. So let us perfect soft boiled eggs.

Ingredients:
2 eggs (fresh)
2 slices of whole meal toast
Butter/nuttelex
Pepper
Salt
1C ice

Method:
1. Bring a pot of water to boil. Gently lower the eggs into the water to prevent them breaking.
2. Set a timer for 6 minutes.
3. Put your toast on. Once ready, butter and slice into thirds.
4. Remove the eggs at 6 minutes with a ladle and place in a bath of ice water to stop the eggs cooking. Leave for 1 minute and then drain.
5. Place eggs in egg cups and slice off the top. Crack pepper and salt to taste.
6. You can now dip your toast in the gooey egg inside.

This is a lovely video by Downshiftology that nicely explains how to cook soft boiled eggs and hard boiled eggs perfect every time.
