Beetroot Dip + Sliced Veggies

Ingredients

450g can baby beetroots
250g Greek style yoghurt (high in calcium and protein)
2 tbsp lemon juice
t tsp ground cumin
1 tsp ground coriander
salt & pepper to taste
Veggies - any you like
1 red capsicum
1 Lebanese cucumber
1 carrot

Method
1. Strain beetroots from can.
2. Add all ingredients to food processors or blender. I find a food processor works better to combine the ingredients.
3. Blend till smooth and then transfer to bowl or Tupperware for an afternoon snack.
4. Slice vegetables into sticks suitable for dipping.

This is a perfect item to always have in your fridge for an afternoon snack of if you get peckish. It is also a sneaky way to get a few servings of veggies in. You should aim for 5 serves of veggies daily. Below I have included a chart of what a serve of veg looks like.
Many jockey rely solely on dinner to get their veggies in and therefore do not meet the recommendations. Why do you need veggies? They contain essential micronutrients including iron, folate, fibre, B vitamins and vitamin C.
