Guacamole
Ingredients
4 avocados
1 punnet of mini grape tomatoes or any tomatoes your prefer.
2 limes - juice of one and slice the other into wedges.
1 lemon - juice
1/2 Spanish (red) onion
Head of coriander or cilantro
Salt
Pepper
Smoked Paprika
Olive Oil - drizzle
Method
1. Dice the red onion and halve the cherry tomatoes.
2. Scoop out the avocados and place into a bowl along with the juice of the lemon and lime. Using the back of a fork, squish down until smooth. Add the red onion and mix it in.
3. Add a large handful of chopped coriander, the cherry tomatoes, cracked pepper to your preferred taste and salt. Lastly drizzle with olive oil and then mix.
4. To serve, dust/sprinkle with smoked paprika, a few more cherry tomatoes and sliced lime to serve.
