Blueberry & Banana Muffins
Makes 12 muffins. If having before or during trackwork, have one muffin with a 150-200g pot of yoghurt.
Ingredients
2C self raising flour
pinch of salt
1C blueberries frozen or fresh
3 ripe bananas
1/2C sugar
1C milk or soy milk
1/3C butter melted or Nuttelex (vegans)
1 egg slightly beaten or 2 tbsp of Apple Sauce (vegans)
Method
1. Preheat oven to 180 degrees celsius on fan forced.
2. I use a silicon based muffin tray so I don’t need to spray it. If you have a metal muffin tray spray with a vegetable oil or rub with butter/nuttelex or margarine.
3. Mash bananas in a bowl with the back of a fork. Then add the blueberries and wet ingredients (milk, egg and butter).
4. In a separate bowl sift the flour and then combine the sugar and salt. Then slowly add to the wet mixture.
5. Once combined, pour into muffin tray evenly.
6. Place tray in the oven for 20-30 minutes, until you can pierce a chop stick through and it comes out clean. Different ovens cook at different temperatures as they age, hence timing may be different in yours.
7. Once cooked take out of oven and rest for 5-10 minutes. Then remove muffins and place on drying rack for a further 5-10 minutes.
