Fluffy Pancakes
Recipe 1: (Vegetarian)
Ingredients
50g of butter or nuttelex - softened or melted
Butter to cook batter
2 eggs
1-1.5 cups of self-raising flour. A good quality flour will help with the texture and flavour.
Pinch of salt (any kind)
1 cup of milk, water, soy milk, almond milk or oat milk.

Pan
Stove
Whisk or use electronic egg beater or hand blender.
1 large bowl
Spatula

Method
1. Place sieve over large bowl. Sieve flour into bowl.
2. Add salt to flour and butter, gently mix/whisk.
3. Crack two eggs into mixture and gently mix/whisk.
4. Add milk, water or your nut milk till batter is thick. You should not be able to slide or drip off a spoon.
5. Heat the pan over medium heat on stove. Add a tsp of butter or nuttelex to pan. Hover your hand over the pan and when hot, add 2-3 tbsp of batter in one area of the pan.
6. When bubbles start to form on the surface, flip the pancake over with a spatula.
7. Once the pancake has cooked on the other side for about a minute, take off pan and plate.
8. You maybe able to fit multiple pancakes on the one pan, depending on size.
9. Continue to cook batter until all pancakes are cooked.
10. Serve your pancakes with your favour topping; maple syrup, honey, berries or bananas. You can save some to take to the races, adding jam or honey. The perfect race day snack to keep your energy up.
Recipe 2: (Vegan)

50g of Nuttelex - softened or melted
Nuttelex to cook batter
1.5 cups of self-raising flour. A good quality flour will help with the texture and flavour.
Pinch of salt (any kind)
1 cup of soy milk (I recommend soy milk as it is higher in protein than most almond, cashew, coconut, oat and rice milks).
