French Toast, Grilled Halloumi & Avocado Breakfast
Serves 1
Time: 6 minutes
Ingredients
2 slices of wholemeal bread, i.e. Burgen Soy Linseed
2 thin slices of halloumi
1/2 small avocado
2 eggs
dash of milk or milk alternative i.e. soy.
honey
butter, nuttelex, olive oil or canola oil to cook.
+/- salt, pepper and lemon
Method
1. In a shallow bowl crack the eggs, add a dash of milk and whisk with a fork. Once combined and fluffy, stop.
2. Put a pan on medium heat and add oil/butter or nuttelex.
3. Soak each slice of bread in the egg mixture on both sides till well coated. Then add to pan once hot.
4. Flip French toast after 1-2 minutes or until golden brown.
5. After you have flipped the toast once, add halloumi to pan. Cook on both sides, until golden.
6. Once toast and halloumi have cooked, serve on plate. Drizzle honey on the French toast.
7. Slice your avocado and then scoop out with a spoon. You may wish to crack pepper and salt on your avo and a squeeze of lemon to bring out the flavours.
