Gooey Chocolate Brownies
Ingredients
150g butter or nuttelex i.e. Lurpak
1C self raising flour - good quality flavour
1.5C caster sugar
3 eggs or 5 tbsp of apple sauce (vegan alternative)
125g dark chocolate melts or vegan chocolate
1/4C cocoa powder
1 tsp vanilla essence
Icing sugar to dust when serving
Method
1. Preheat oven to 180 degrees fan forced. Line a 20x20cm square tin with baking paper or rub with butter/nuttelex.
2. Heat water in a pot allowing to simmer. Place heat proof bowl over pot and melt the butter and chocolate melts. Once chocolate and butter has melted set aside to cool slightly.
3. In a separate bowl whisk the eggs (or apple sauce), sugar and vanilla essence.
4. Whisk in the chocolate mixture into the egg mixture.
5. Sift in the flour and cocoa and whisk.
6. Pour mixture into tin and place in oven for 40 minutes or until you can pierce with knife and it come out clean.
7. Once cooked, sit on drying rack till cool.
8. Slice into 2 x 2 cm cubes
9. When serving dust with icing sugar.
